This is one of our favourites. Cauliflower fried “rice” with kung pao chicken. I’ll admit, it took me a long time to jump on the cauliflower-all-the-things band wagon but guys, this is awesome. Less than 200 calories a serving and it tastes JUST like regular fried rice.  All you need is a food processor (or mad knife skills).

Veggie chili on brown rice topped with yummy stuff.  My veggie chili recipe is one I’ve had since I was a teenager – I’ll probably post it here at some point – but what I never thought about doing was putting all sorts of yummy stuff on top!  A few years ago when I was visiting a friend in the UK she did this with her chili and I was hooked.  We usually start with a base of brown rice (although I recently tried a baked sweet potato and that was lovely) top it with a serving of chili and then add avocado, sour cream and cheese.  I measure out the toppings so it doesn’t get too crazy in terms of calories but a little goes a long way to adding some filling fats to a veggie heavy meal.

Almond crusted chicken breast with lemon zucchini and carrot noodles. This recipe looked super simple on Pinterest and was NOT so simple in execution.  We ended up having to use double the amount of almonds to coat the chicken which made this healthy meal not so healthy when it comes to calories (don’t get me wrong, almonds are awesome and healthy and good for you, just in controlled amounts).  The almonds were clumpy and didn’t stick to the chicken very well.  However it was a really good alternative to chicken parm which I do miss sometimes.  Might have to revisit this one.
